suzuki 750 katana has plenty of power for big riders granted it isn't the hayabusa but they are quick and lots of fun. easy to handle too. Hayabusa way too much for unseasoned rider. kawasaki kz600rr is another good bike.

If I were you I'd find a used Suzuki Bandit 1200 or used Kawasaki ZRX 1200. Both are great bikes, all the power you could ever want, handling, normal seating (not all bent over), and decent looking too. They were an absolute bargin when new, so, used I doubt you could find anything else that will give you as much bang for the buck.

600s will work perfectly fine, just cause youre big doesnt mean you need a liter or better bike. I rode and raced 600s for years and I'm 6'3" and 250, granted my racing weight was a little lower, I've gotten fat over the years. Currently I have a R1 but I also have a vtr250 I bomb around on. I still find 600s a blast to ride.

If you haven't ridden very much, buy an old beater bike to learn on. Something that if you drop it your not fixing 2 grand worth of plastic and fiber glass. You can find larger non sport bikes cheap and you can make your mistakes on a bike that you won't hurt much.

Yea you need a big bike. Look into the Suzuki Hayabusa. It's a strong and fast bike, but it's big and heavy, it's perfect for you. There are other bikes that will fit you as well, but the Hayabusa is the sexiest, best looking bike of all.
other consideration:
Suzuki GSX-R1000
Honda CBR1000RR
Yamaha YZF-R1
Kawasaki Ninja ZX-14
