I thought about using poster board, and putting 4 sheets together to make a big square and drawing and cutting out. Any better ideas would be greatly appreciated.

Contact your local newspaper and see if they have any paper that might do the trick for you. they receive paper in big rolls. Tell them what it is for and they just might donate it to you.

www.bigideafun.com has Veggie Tales coloring pages. You could project these onto sheets of brown kraft paper, trace them, and paint them in.

Of course, you will need permission from Big Idea. Anything you produce is subject to copyright laws. But I wouldn't be surprised if they were happy to help. Or sent you a couple of posters.

You could buy poster board (it does come in bigger sizes) and using a transparency to trace the picture on. That way you can make it big by placing the projector as near or as far as you'd like.
Places like Office Max, etc have really big cardstock.

take the pictures of the veggies to kinkos and blow them up really big, each seperate one, then i would use foam core board for stability and use as many sheets as it takes, trace your characters onto it, then paint with poster paints.

You can find rolls of paper in art supply stores, or office stores in the drafting department.

use an overhead projector and tape some paper to the wall. you can make it large on the wall and then trace it.
