Their hypothesis was that the discovery of fermentation was the impetus to domestication of grain. This hypothesis assumes that fermentation was possible with pre- or proto-Neolithic technology. A major step toward the confirmation of the hypothesis must therefore come through the demonstration that a controlled and reproducible fermentation was possible given the technology available at the dawn of the Neolithic period.
To prepare an edible grain dish, cultures generally grind grains and add the paste to water, making a gruel, porridge, or mush. This the first step for either bread or beer. Gruel that has been allowed to ferment is also a traditional food of many cultures. The fermentation process, in addition to adding nutritional value, preservatives, and alcohol to the food, adds flavor to an otherwise monotonous dish.

Although it may have long been possible to malt grain and to make a fermentable mash, it was probably difficult, to make a reproducible fermented beverage, before the invention of pottery. Therefore, it may not have been until well after the invention of pottery that the production of beer would have significantly influenced the use of domesticated cereal grains.

According to an article in The Economist, a 3800-year-old clay tablet from King Hammurabi’s reign in Mesopotamia (1720 BC), depicts Ninkasi, a Sumerian goddess brewing beer. Mesopotamia is the region of the earliest cereal domestication.When the "Hymn to Ninkasi" was written, beer was made using bread, bappir. We also know, from various annotations on bappir and beer in the Sumerian and Akkadian dictionaries, that bappir was eaten only during food shortages. In essence, making bread was a convenient way to store the raw materials for brewing beer.

The oldest evidence we have of humans actually causing fermentation in order to get an alcoholic drink comes from the Republic of Georgia in the former Soviet Union. There we have found evidence that dates to around 6,000 BC of winemaking. Who the people actually were that did it I'm not sure of. With a little research you could probably find out their name. Fermentation itself is a naturally occurring process in fruits and as such it's been around long before humans.

Most people consider the ancient Egyptians to have perfected the fermentation process which they used to make beer. The Mesopotamians also used it for beer and the Egyptians may have learned it from them.

In a village in a warm ancient valley where they had large clay pots for holding whatever they could harvest and the grass was the only thing in season at the time. Some one needed one of the grass storage pots and becase he was rushed; the water in it tasted better because of the grain! Better than plain water, beer was born!!

its pretty ancient i thought but I know Dom perignon discovered fermentation to produce champaign..I think he was a monk
