(CH3CO)2O + CH3CH2OH → CH3COOCH2CH3 + CH3COOH

Acetic anhydride + ethanol --> ethyl acetate + acetic acid

You don't get just one product when you use acid anhydrides, you get two. In this case, you get a 50/50 mixture of ethyl ethanoate and ethanoic acid.
