If you mean to keep them from jumping, that's always a good idea even though bettas aren't known as major jumpers. If you mean to keep the light out, only if the room stays well lit all night.

You definitely need a cover (actually applies to any tank unless the water level is left low enough to prevent them from jumping out). They can and will jump through the smallest of openings. I have lost one on a tank that was covered when he jumped through a 1" square hole where the heater went in. And that opening was 2 to 3 inches above the surface of the water.
I also went in the Petsmart near my office a couple weeks ago and found 2 dead ones beside their cups. For air holes, they cut a triangular hole in the lid rather than just having small air holes. They had jumped through the holes.

No you do not need to keep you betta covered at night. This would be especially bad if you have him in a small bowl due to the fact that they are air breathers. They can breath from the water but they also breath from the surface of the water using a pair of primitive lung type organs called labyrinth organs. If you cover him then the CO2 produced will accumulate over his bowl. He may not die but it will be a stresser. Another stresser for the fish would be taking on and off the cover. I have never had a betta jump out of a bowl or tank before. You are safe without covering him and he will be better off not being covered. Good Luck!

I'm not really sure what you mean by cover. Betta are jumpers and have a lid on their container. (They still needs to be airflow.) Also betta at tropical fish, and if they are in an unheated bowl covering it can help retain heat. Honestly you should really have a heater.

No you don't :S... If the bowl or tank doesn't have a lid then get a lid cos they have a tendency to jump but don't cover the entire thing. Get a lid which has holes punctured in it for new air to move in.

They should have a cover all the time that you aren't watching them. They have a habit of trying to explore your world. They end up like dried up saltfish on the floor.

You don't really need to, but I would anyway just in case you have a jumper. AND to keep another animal from eating it like a cat or uh...a ferret..
