Electric fence works wonders. One or two zaps (the dog, not you) and you can turn it off. Just leave the wire up to keep them out.

I was told the other day that if you bury balloons on the approach it takes as close as you can that doesn't interfere with the plants you can deter the dog from entering that section of the garden. Seems a safe and (dare I say it funny) way to achieve the desired outcome. If nothing else it would be an interesting place to have that sunday arvo beer whilst being entertained for very little.

Important alert....
There are various types of plants that are toxic to canines and if consumed, could end up fatal.
Firstly, you should visit the various sites on the internet or your nearest library to aquire a full list of toxic plant material relating to your geographic location. If you possesse any of the toxic plants listed, you should dispose of them.
Further more, your canine may have a behavior problem. instead of letting him eat plant material, you should deter him from this outside activity by introducing different things for him to do out doors, such as one on one play time, give him a various array of toys to play with when he is outside, etc. Make his time outdoors productive.
Consistant voice commands like NO when he goes for the vegetation.
It is important that he be supervised outdoors until he breaks the habit. You will have to be once again very consistant with him, and invest the time in doing so.
Eventually this habit will disappear.
It all depends on you.

Training or a fence, First of all, all dogs need to learn early on what behavior is acceptable & what is not. I usually give my puppy a very very stern NO! NO! & swat him with whatever he chewed up.(Tonight is was the bag of left over mulch) Last week he got into my hens & chicks I had just planted. He hasn't touched them since. They have to learn.

Crushed pepper is an excellent answe. You could also spray plants with amix of water, dish soap (a couple drops) and tobasco. We have trained our dog to not eat my plants - she does really well.
