You want to be very delicate in the "delivery". Let the person know that you are picky about what you eat and would like to assist in the preparation or the cooking. Watch what that person is doing - and point out any errors.
Or,
Just tell the person you need to give them some very friendly and loving advice...and then explain to them how they "loused" up the food.

It really depends on what relationship you have with this person...if it's your wife and she cooks for you often, then be gentle and instead of using the word 'lousy' let her know what you don't care for in a particular dish...too much garlic, etc. Just because what she is cooking isn't your preference or you just don't like the taste of it, doesn't mean you don't like her.

If it's someone that doesn't cook for you often, just leave the issue alone and grin and bear it when they do cook for you.

tell them straight because if you dont there still going to be cooking you lousy food an with the help of you you can help them cook really nice food...

It depends! How often do you have to eat their cooking?
If it is only occasionally,then you should just put up with it.
If you have to eat it all the time then you should maybe help them with the cooking and try to teach them a few cooking tips!

You should suggest nicely some new styles of cooking and new recipes to them or you could cook together and show them the recipes you like and how to make them. Encourage them about cooking.

Start preparing food yourself. Sort of "teach by example". Unless you cant cook either, then you're in a bit of a jam.

you dont. that is rude. Worse than their poor cooking. As an Army brat we traveled to many foreign countries and had to eat many different foods. We ALWAYS thanked our host and ate what was on our plate. Im thankful my father taught me my morals.

if you are stuck at the dinner table just say you think you tasted someting wierd and dont agree with there sugestsions then if they offer you a new batch say you think you might be alegic to what the wierd thing was

You don't use the word lousy for one. Do it with affection and maybe a little humor if they can take it. They may already know.
