I worked at 7-11 as a young teen.
One night, the power went off. The beer coolers and the front door automatically locked.
I was locked in the store with two customers until the power came back on and the security system reset itself.

so they can lock the doors if theres an emergency. like a power outage.
so the clerks who work by themselves can use use the restroom and no one can get in to rob them or shoplift during that time.
they are required by law, or for insurance purposes.

In case there is an emergency and the clerk has to leave immediately, he/she can lock the store until another clerk is there to replace him. If no one was there, then the store would probably be looted.

who knows maybe so when there is like a murder walking around and they know he's there they can lock the doors so he doesn't shoot them
