What causes a fluid to embark up a tube? (A straw??)?

When you suck, you lower the pressure in your mouth. Atmospheric pressure, pushing down on the surface of the liquid, is now greater than the pressure in your mouth, so it pushes the liquid, which rises up the straw, in an attempt to raise the pressure in your mouth.
