To me this is one of the coolest parts of ceramic sculpting. It is one of the only mediums that is both additive and subtractive. Hand building is just a term that means you are using ceramics as a sculpture medium. You can add more clay to places as you need, and take a way clay (using either your hands or tools) to make the clay into any form you want. If you are hand building, one piece of advice I can give you is be careful about the thickness of your piece. If you are making a thick sculpture out of clay you may need to carve out the center to help you dry the clay for firing. If the clay is not dried completely and is fired too quickly it can explode in the kiln. I hope this helps.

Hand building is making a object by building it from pieces of clay instead of having a lump of clay that is turned on a wheel and shaped as it spins or a rolled coil of clay that is stacked around and around and then smoothed. Much clay scupture is hand built and the Penland Book of Ceramics has a lot of examples.

Well, there's also "pinch pots" and "coil building". Pinch pots are made by taking a ball of clay, making a hole in it right in the middle (but not pircing through the other side) then you pinch the side with your index finger and your thumb to make the walls of the pot.
Coil building is also a kind of hand building. It is when you take a snake and manipulate it so it looks like a slinky. You can then smooth the walls with a wet sponge. Lastly, there are also mold you can use. All of these are kinds of hand building.

Handbuilding simply refers to creating sculpture out of clay by hand. This can include formative sculpture, which is simply forming the clay into the desired shape. Coil building, which is making a piece from rolling out coils (often vase-like or vessel sculptures). Slab building is done by rolling slabs of clay and piecing them together with slip (liquid clay) to make such things as boxes and vessels. Wheel throwing is NOT handbuilding. One note on the answer above-while you should carve the middle out of a thick sculpture to decrease the likelihood of air pockets and excess heaviness in the piece you should pierce the final product to create a space for the air to vent...after all, if you are carving out the middle and then sealing it, you have just made a massive air pocket that will explode.
