Because it's a movie and in movies and stories there have to be good guys and bad guys. It has nothing to do with reality. The Persian army was not treated any worse and they were not less of humans than the Greeks. It's just that the creators of the movie wanted to make the good guys really really good and the bad guys very very bad.

Persians paid well. Beasts or not, cash held sway on a lot of people. Still does. The history of the era shows mercenaries often fighting each other, and against the interests of the Greek city states.

As to the movie 300, it's about as 'true' as a Mickey Mouse cartoon. Please do not use it as a source of any history, though you might use it as a motivation to study what did happen.

History is often facinating.

Persians were far from being beasts. Stop believing the nonsense you see in movies.

Because Greeks always fought as mercenaries. After Heroneia disaster, they fought severely against Macedonia, as mercenaries in the Persian army.
