Modern roller coasters have 3 sets of 2 wheels per car. The first set is located on the top part of the tubular steel track, the second is located on the side of the track (to keep it from falling off sideways), and the third is located on the bottom (to keep it from flying off).
Passengers are kept in by (usually) an over-the-shoulder-restraint (for inverting coasters), or a lapbar (for non-inverting coasters).

all the safty stuff like the bars that lock keep the people from falling out, and for the roller coaster not falling off the tracks.....well there has to be some explanation, that would be a bad thing to think about if your on one.

Gravity and a bunch of other forces keep them pressed to the track, i guess you could say that they dont have time to fall off when they go upside down.
