The heads are hydrophilic, having a strong affinity for water, so they face the exterior.

The answer is No. 5 I'm sure.you know why?as
for No.1 it's wrong as the PO4-3 groups are hydrophilic due to the -ve charge on them.
for No. 2&3 the fatty acids are very hydrophobic & they are not ionized.
for No. 4 proteins are not only located bet. the 2 layers as they are also located in each layer of the 2 to make openings in the membrane to allow exchange of certain substances.that's what is called the protein channels.
for No. 5 & because of the polarity of the phosphate groups , the are directed towards the exterior & the interior of the cell as both inside & outside the cell is hydrophilic so the cell membreane can interact with the surrounding of the cell.
