If you want a deep end I'd say 7 feet should do you well. Maybe 6 and a half if you don't have that much room to work with or need to cut down on water volume in the pool but I'd say 7 feet should do it for you.
As for just a regular pool I'd suggest a pool at least 5' deep. Maybe you can get one of those staging pools where they're really shallow at the edge but as you go more into the pool they have a deeper area. This could also be done by having a shallow area and then a deeper area as you walk/swim down the length of the pool.

Our pool is 18 x 36 abd it's 9-1/2" deep. Probably about 8" would be good.

At that size it should be 2' deep (wading) at the shallow end and a max of 8' deep (swimming) at the deep end. The correct answer is really.....as deep as you would like.

It can be all one depth or several...You can get a pool to go from 3 to 6 feet, or less or all one depth. Think about it...
