Always give year, make, engine size and model # when asking questions. We need all of that info to give an informed answer. The mileage of your bike would have been helpful.
The clutch might be slipping just as you release the clutch lever. The strain of the engine trying to make the bike go faster, could be just enough to break the clutch plates free for a second.

Lubricate/check your throttle control cable and linkages, if they stick at all the revs will shoot up as soon as the load comes off the motor from clutching in.
