I would separate it into four parts, Water, Wind, Earth, and Fire! I should also preface this seeing as I have unlimited resources I would have a private jet that could fly my places quickly throughout the trip.
Water; would include scuba diving in the Great Barrier Reef and taking in the entire Oceanside area around Australia and New Zealand. This would entail surfing, snorkeling, and sailing, everything water oriented. I would also eat as much seafood as possible, and relax on the beach when I am not in the water.
Wind; would involve a few separate activities. The first would be sky diving, from as high as I possibly could without needing an oxygen mask. The second would be parasailing from a high cliff, probably somewhere in Australia since I would already be there. The third would involve B.A.S.E. jumping. Finally, I would want to experience the thrill of flying in a new Air Force Raptor to feel some true G-force. The food pairing here would be light dishes that would give you energy...I am not too picky, but this seems like a good pairing.
Earth; I would go to a few different places. I would hike the Red Rocks in Sedona, AZ and then head to St. George Utah and take in the scenery near the city. I would also go to Kartchner caverns in southern AZ and Carlsbad to really view the Earth from below. I then would fly to WA and hike St. Helens and Rainer. The food pairing here would be hearty dishes from throughout different parts of the world. I.E. Cassoulet and other dishes.
Fire; I would first fly to Hawaii and hike Kilauea or one of the Hawaiian volcanoes and then go to the area where the lava flows into the ocean to see how those mix together to form new land. I would watch a Hawaiian luau and the fire dances that usually go along with it. I then would head to northern Mexico to see how Tepin is grown because this is the world hottest pepper as far as I know. I would defiantly have a dish with some Tepin in it, because you have to live a little. Finally, with a couple of days to spare, I would travel to Fire Island in NY and relax on the beach and do nothing until the trip is over. Obviously the food pairings here would be spicy and unique dishes that bring out different spices.
I would say you need a few people to come along with you too experience everything and it would be a blast.

I think I would spend a week in Amsterdam where everything is legal LOL than I would spend a week in Italy since it is somewhat close to the Netherlands. I love Italian food and art.
