Why is it that when I turn the door knob the door does not turn along with it? How can the knob that is attached to the door turn without turning the door too?

The knob is on a shaft. You are turning the shaft and not the door. the shaft rotates inside the door.

The door knob mechanism is designed to work that way. The door and the door knob are 2 separate things.

To understand how a door knob/latching system works, it is best to take it apart, mess with it and try to reinstall it. It sounds funny, but it is really the best way to understand it. As an alternative, go to a local hardware store (not a big box) and pose the question to them. They usually have a display model and will not mind opening it up and walking you through how it works.
