it looks like a pretty simple interface, just write to the address for the channel you want to convert, then to make it simple, add some delay time (probably doesnt need much), then read the address for the channel you want to convert. it uses the standard address/data bus for the 8051 so it should be just like reading any external memory location.
i added the link below just for the interface shown in fig 1. the code wont do you any good because its for another processor.

what is your question? and this adc 808/809, is it the procon tech board? And as far as the 8051, which MCU are u using (atmel, intel, blah, blah blah)?
