There are so many scientific and technical innovations but ; I would put the top two as the Germ theory on which most of modern medicine is based and the Telegraph which allowed for instantaneous communication. There are several candidates for number three but I will go with the steam engine, which mechanized industry and gave us steamships and railroads causing a revolution in transportation.

Chemistry started the period with alchemy and in 1869 had the periodic table of elements and in 1900 found radioactivity. Newton published his work on motion in 1687 and Einstein the theory of relativity in 1905, so the two hundred years in question covers the development of nearly all of classical chemistry physics. Each advance was built on the previous ones, so it is next impossible to pick out a single discovery as the most important,.Most of the transformation to the industrial world until 1940 was based on classical physics and chemistry,
The discover of the germs laid the foundation for modern medicine, and by itself is responsible for substantial improvements in life expectancy through improved sanitation.
