Being a notary public is not generally a career, and rarely even a separate job. It's just a license that the notary has to perform a certain function.

Most notaries do that as part of their day job -- as a bank employee, or clerk, or paralegal, or administrative assistant, or whatever. A few do it as a side-job, to pick up some extra money. But I don't know any that do just notary work full-time.

Notary Public are really not paid as a notary, but as the position for which they work. Banks and credit unions have someone that does this position, and they are paid their usual bankers salary. Universities have the same thing, and they are generally just paid for the job they usually do, and the notary is just one of their many responsibilities.
