To make it appear they have more variety? To make it seem like you are actually paying for something worthwile when actually its all rubbish

There are many different cheeses at Subway to choose from.
There's cheddar, American, Swiss, Provelone.....
They are just giving their constomers a lot of choices, so it's like making your own sandwich w/o the hassel.

I don't know what kind of subway your eating at.
But they have White Chedder and Provolone (which have the same color and look)
