Take an apptitude test to focus on where your strong areas of interests and abilities lie...then go to a counselor at a college for some possible suggestions. I will say that any job or career will most likely have days where you will need to work over or may be bored from time to time. It;s work...not a party, and even with a degree and a career, it does not guarantee all of your desires.

What might help is if you ask yourself this question. If money were no object, what would I love to do with my life. Really give it some time and see what answers you come up with. Once you have that figured out, then you have to see how you can earn a living doing exactly what you want to do. You will have a better idea of where your interests lie. There's no sense going from job to job and hoping that it sparks your interest. Get the interest first then start searching for a job.
You are the only person who can answer that question.

I hate to break it to you, but unless you intend on pursuing a medical degree and opening your own practice (even then, you could be on-call for emergencies), the hours you want to work will involve doing the same thing every day. Sorry.
On the plus side, I had the same boredom issue as you, and I found waitressing/bartending quite fulfilling.

Look around you until you find something that says, "Hey, I'd like to do that for a living." Unfortunately, most jobs come with some of the things you are trying to avoid.
