If you mean crafts to sell in the booth, try beaded bracelets and earrings. The earrings are dreadfully easy (email me for simple instructions if you want them -- click on the name under my avatar for my email link) and sell well if they're priced well. Practice a little, then you can even sell made-to-order earrings; let folks choose the colors of beads you'll use to make their earrings. People love the just-for-me touch. Beaded bracelets are simple enough, too. Be sure you have gift boxes or folders available (email me for a pattern for the gift folders) so people get the idea to buy an extra pair as a gift for someone.

If you'd rather, bake a bunch of stuff and sell it. Crisp rice marshmallow treats sell very well at things like this. Add sliced gumdrops (just after you add the cereal) to make them special and pretty.

i took two six foot long tables and put them at right angles and put a table cloth over it that went clear to the ground on the front side so i could keep boxes and stuff under the table out of the way, took a chair and a big sun umbrella, later i got one of those little square topped tents that goes up like a giant umbrella. i sold jewelry, costumes and small statues of medieval knights, and dragons, but i sold things at ren fairs, so those things were in keeping with the theme of the event. if you dont have lots of things ready before the event its just not worth trying. i would work all winter and still worked between fairs to keep my booth filled.

Wow, usually it works the other way around. You would be making something for a long time and get so good at it that people would start asking you to sell them some.

Maybe you could go around to your crafty friends and collect things from them to sell on consignment? Or you could dig out grandma's famous pickle relish recipe?

Also, didn't the fair make you tell them what kind of item you would be having? Most of the time they will try to control the number of bakers, knitters, woodworkers, et cetera.
