I saw a TV show in Japan about this. They're masters at it over there. It's not real food, though. No food is solidified. It's an artform and the artists work in the medium of plastic.

In Tokyo there is a small area which is well known for this. It's an area where a lot of other restaurant goods are sold as well. If you get the chance, please visit there. It's very cool.

If you want to do that yourself, I'd say learn some Japanese, go to Tokyo, and find this neighbourhood. Talk to people and while waiting to get a job, spend as much time possible sculpting food at home out of clay or any other material.

If you don't want to take it that far, just find out what company created the food that you see, then maybe write to them asking the same question.

Tokyo is not only the political and economical centre of Japan but it has also emerged as a centre of the world economy and culture so is a city worth visit; with hotelbye you will see more. There are a number of attractions in Tokyo that should not be missed. There are large-scale downtown areas, including Ginza where famous shops from around the world stand side by side, the sleepless Shinjuku that has become the "new city centre of Tokyo," Asakusa which is reminiscent of the traditional Edo (the former name of Tokyo) and Shibuya that starts the trends for the young people. Tokyo is an interesting city, a city that you will never forget once you visit it.

The plastic parts are usually bought and put together, or are made to order. Example- If you are talking cakes, you buy a plastic cake dummy and paint that has the consistency of icing, then apply your design as if decorating a real cake. ( www.kitchenkrafts.com sells these items)
Or you can find someone who knows how to make molds and finished castings of foods for custom jobs. Be warned- they are not cheap. HTH.
