If we took some nukes and buried them in Mars volcano's set them off. Allowing the volcano's to heat the atmosphere. Could we breath the air at somepoint?

No, the atmosphere would still be far too thin to breath. It also wouldn't be the right mix even if it were thicker.
From Wikipedia: The atmosphere on Mars consists of 95% carbon dioxide, 3% nitrogen, 1.6% argon, and contains traces of oxygen and water. (Earth) ...is 78% nitrogen and 21% oxygen, with trace amounts of water vapor, carbon dioxide

The atmosphere on Mars is roughly one-tenth the pressure of Earth. You would need to relese teratons of oxygen in order to be breathable.

I don't think there is that much oxygen available in the rocks. I could be wrong.
