My favorite is:
We see the world not as it is, but as WE are.

It means that regardless of what happens to or around us in life, how we percieve it (both it's meaning, and effect) is a reflection of who we are. For example, if you are convinced the world is racist, you will perceive more racism in the events that happen around you, whether they are indeed racist, or not.

I like it because it challenges us to be careful about the judgements we make about things, or at least understand that other points of view are valid.

I have this boss who is an emotional cripple. Whenever he stresses out about a deadline, he sounds like a (very poorly written) self-help book - he spouts these trite expressions to calm himself down. One of his favorites is, "It is what it is." No, really, Bob?

It used to drive me crazy, but I've taken control of it now. I am no longer driven to a state of fury when he says it - I just repeat it right back. It's oddly soothing.
