I saw a few references to the word cracker, but we don't have it here in Scotland, what is it?

It's a derogatory term for white people, similar to calling a black person the "N" word.

When used in pop culture, the term "white cracker" or "cracker" is sometimes intended to be humorous rather than abusive, though the distinction is not always clear.

A puppet named "Colonel Crackie" played the stereotypical Southern gentleman in the children's television show Kukla, Fran and Ollie which aired on NBC from the late 1940s to the late 1950s.

One theory holds that the term dates back to slavery in the antebellum South. Many slaver foremen used bullwhips to discipline African slaves, and the sound the whip made when used was described as 'cracking the whip'. The foremen who cracked these whips were thus known as 'crackers'.
Frederick Law Olmsted, a prominent landscape architect from Connecticut, visited the South as a journalist in the 1850s and noted that some crackers "owned a good many negroes, and were by no means so poor as their appearance indicated."

depending on what your talking about..

cracker - can be like a grain treat.. kinda like a biscuit/cookie.. but not sweet.. and is good with cheese..

cracker can also mean a white ignorant, aragoant person..
