Plant lots and lots of wildflowers. They are pretty and leave you with less to maintain. A field of flowers is not the same as a field of overgrown grass. People can tell the difference:)

If you have money to burn, you could build an awesome pond that would definitely reduce grass cutting, etc.

Get livestock like sheep/goats/cows, they'll keep the grass down.
