First, is the house gutted, or is there Sheetrock on the walls? Are you replacing just the water? How about the waste and vent system? Is there any gas pipe? Without more info, and a set of plans, or at least a sketch of the layout of the house, NO plumber will stick his neck out and give you a reasonable bid. You will get some very high bids, just to protect themselves from being held to a low bid. By saying you have a 2 bath house, doesn't give us a fixture count. We need to know how many plumbing fixtures, what systems are to be replaced, location in relation to water, sewer, gas, etc., and who provides what. Is this in the city? If it is, then a permit is required to perform this work. If you are replacing water pipes, what type pipes do you want to install? What is allowed in your city? The same thing with sewer pies, and gas pipes. You see we need lot more info! Good luck!
