Veuve Clicquot is an old French Champagne. The ginger ale is a takeoff on that name. It is pronounced "cleek-oh."

Your guess is not even close, it is a a famous vintage of French champagne, more specifically "Veuve Clicquot", i.e.
Widow Clicquot. Pronunciation: Vuhve Kleeco, the 'uh'
somewhat prolonged, the accent on the 'o', and, yes, I do speak French, fluently.
