I'm working with a leasing company and they had me sign lease documents and deposited my deposit check. Now, 3 days later they want an additional guarantor for the lease. Can they do this? Didn't they accept the terms and conditions of the lease when they had me sign the documents and deposited my check? Please help.

You are correct. A contract is in force when the terms are agreed to and there is "consideration" which basically means payment.
It appears you have the right to bind the lessor to the terms of the lease.

Did you get a copy with their signature on it? If not, they did not agree to anything.
