Memorial Day is usually a safe time to start planting outdoors. We may see frost as late as June 1 in the state, but it's usually light and plants can be covered with a blanket to protect them. The weather is so unpredictable here though!

I keep seeing May 21 in my web search. On the other hand, I live in Ohio and I know from experience I'm using around that time myself. Minnesota seems to have several planting zones in fairly close proximity to each other and I might be a bit cautious. Ask your local garden center, they probably would have more experience.
