Well I think Chippy is fine, cute name by the way. If he is a new gerbil he is probably just getting aquainted with the area, if not it may just be that he is just cold. Gerbils like to burrow alot. I had two hamsters and all they did was eat, crap and sleep. They slept more than anything. If you are giving him what he is suppose to eat then rest assure he will come out and eat when he is hungry. I have noticed that they come out more at night when we are asleep than any other time. if you see alot of poop around you know he is eating. So I think Chippy is fine, just keep an eye on him and if continues not to eat, maybe call your vet or your local pet store to ask questions. Have a good day!

Have the length/condition of his teeth checked.
However - you can provide a SHALLOW drinking bowl if he doesn't like bottles. My mice have a bowl and a bottle, in case their bottle ever stops working (it happened once).
Also - you give your gerbil more than peanuts and carrot right? He needs proper gerbil mix to get all his nutrients! Therefore, if he doesn't eat carrots and peanuts, fine, he just doesn't like them.
If you've only had him a few days or less, he may not be settled yet, as someone said.

Gerbils only drink a teaspoon of water a day (it can be rare for you to catch them drinking).
If you just got this gerbil he needs time to settle in before he'll want to be out, about, and eating his treats.

Check to see if his teeth have grown to long. Many rodents have a problem with there teeth growing to fast. That's why they need things to chew on....to keep them ground down. Another problem could be constipation....if they do not get enough fiber in there diet it can cause them to get sick and not eat......some timothy hay should cure that up......frankly there could e many reasons that he's not eating....old age....loneliness.....not enough playtime with you...... with small animals it's hard to diagnose a problem.....the best idea would be to take him to a vet......
Hope he feels better.
