The ones being "done to death" are done for a reason. They sell beer. Bar owners are in the bar biz...not the music biz...
I'm always asking this same question tho.
Classic rock bands should be very versatile. Get a list of about 100 songs together and you can respond to what the audience likes. Some nights might be a dance crowd, some nights might be an 80's crowd. Some nights you might have head bobbers....just be prepared for anything.
