A formula such as H=-16t to the 2 power + Vt. With a table of #'s such as Initial Velocity=48 feet per second, time in seconds 0, .5, 1, etc. amd height in feet -, 2-, 32, etc. but what are other possible uses besides finding the height of a projectile?

Your formula,
H = -16 * t^2 + V * t , is based on
H = .5 * a * t^2 + V * t,
where a is acceleration = g = about -32 ft/sec^2.
Another use for this equation is to find the height by dropping something and timing its fall.
Other uses can be found when you turn the equation around, for instance to find impact velocity of an object dropped from height H,
V = a * t = sqrt(2 * a * H)
or to find the fall time
t = sqrt(2 * H / a)
