I'd like to add a second dual core processor later so that computer would eventually be a "quad core", but I'd like to start with just one dual core processor. Can this be done? Does anyone know what AMD processors this can be done with?

if you have a 2nd socket for the motherboard then you can add it at a later date. It depends on your motherboard, not the brand of processor you use.

hit control-alt-delete and open task manager, there you can set process affinity to a certain program to utilize which processors the program will use. sometimes programs only recognize one processor so click the 2nd one and you will have both running that program.

Read the User Manual that came with the motherboard to see if this feature is supported.

This has nothing to do with the brand of CPU.
