B and C are water soluble. You pee them out. Fat soluble vitamins - A, D, E, and K stay in your system long enough that by the time they are decayed, they have been replenished. Water soluble ones you just pee out and sweat out and etc.

I don't know the source of your suppositions in this question. First, vitamin D deficiency is so common it is now considered an epidemic. Second, recent studies on preschool aged children in Lincoln, Nebraska found 91% of them had inadequate vitamin E levels. So, deficiencies in these two vitamins are extremely common.

The extremely common use (needlessly) of antibiotics may contribute to vitamin K deficiencies because healthy microflora (that are killed by antibiotics) produce this vitamin. Additionally, most Americans eat few if any green vegetables, which are the primary dietary source of vitamin K.

B-vitamin deficiencies (inadequacies) are common because of the high consumption of processed foods. Additionally, deficiency of B12 is common in those using acid inhibiting drugs (Nexium, Prilosec, Pepcid, etc.).

Vitamin C inadequacy is common because most Americans eat too few fresh fruits and vegetables.

Lack of vitamin C caused of diseases for sea farers who were on the ships for months and months or a year. Historic records.

Because vitamin D, E, K are more abundant in most foods that we eat. their concentrations are higher on typical foods. However vitamin B and C have less concentrations in typical foods.
