I think it's great that this is what you want to be! Have you looked at the do-it-yourself network? Their website is www.diynetwork.com. There are projects on there for kids as well as adults. Hope this helps.

That's unrealistic. I highly doubt that you could be qualified (as in having college degrees) in all of those areas unless you major in all of those fields in college. Pick ONE or TWO of those choices, preferably ones that are somewhat similar, and stick with those. Either an architect and a landscaper or an interior and exterior designer. Though, if you want to prosper in your career, it would probably be best to pick ONE of those options that you've listed. You can gain "fame", recognition, and more money if you have many years of experience in that one field.
