The first thing to happen when the sun is almost ready to die is it will expand to form a red giant. Anything from the planet Mars on in will be toast. The only way for someone to live is move to another planet or a space station. Hey...that will be about 5 billion years from now so no need to get too bothered by it yet. After the sun gets done toasting the inner solar system, the outer layer of the sun will be puffed off into space and the remaining portion will collapse down to form a white dwarf.
The only other thing to do would be to move the planet...we should have the technology by then to do that...or we'll have nuked ourselves out of existence and become 6 billion chucks of well done steak.

Well, like Gene said, we'd actually all freeze, and pretty quickly too. But for a more imaginative and speculative take, read the Fritz Leiber sci-fi short story, "A Pail Full of Air", about this very topic. (It includes people living in an insulated cave, going outside to scoop up buckets of liquid oxygen to thaw and breathe!)
