I think it has to do with how scientists study lab rats by making them run around through a maze in order to see how they respond to various negative and positive stimuli.
To my understanding the phrase the rat race refers to a comparison of modern life and rats being run though a maze.
Do the things society thinks you should do, get a piece of cheese
Buck the system, do things differently and run the maze in a different order than all the other rats, then no cheese for you.
