Best for classes at night?
Barring those "for-profit" and "online" schools, I'd say Temple University.
It was originally founded over 100 years ago with the adult student in mind, and was so famous for its night classes that the sports teams are "The Owls."
While it has less night classes these days, it still has a strong commitment to having them available, and as a Bio major, just about every class I took was available at night or in the afternoon.

Biggest - as in number of students? Just a guess, but probably Ohio State, Michigan or Wisconsin.
