I use Word Pad. If, I doing a Web Page and HTML I use Note Pad.

Note software? You mean music? iTunes is great for music. So is Garage Band. Both come with your Mac, so you don't have to but them as extras :)

For making notes, Mac OS X also comes with "stickies" - just like a post-it!
