A couple of the most common reasons are:
1. Access to the area under the tree. So you can walk under it, mow under it, etc. without hitting your head on branches.
2. Opens up the area under the tree to sunlight so plants can grow under it, and allows for maintenance under the tree (Can clean up needles so they don't acidify the soil).

The main reason is to be able to mow around the tree more easily and it also helps if say one of your kids' balls roll under the tree. We once had this blue spruce that was near our basketball court growing up. It was such a pain to retrieve basketballs out from under that thing. Those needles can be very sharp, let alone sometimes getting sap all over you.
It basically makes maintenance around the tree much easier.

Aesthetics. They usually cut them because the older they get, the rattier the bottom branches get. Also, it can improve the view. Last, but not least, as the tree grows, you will be able to sit and walk under them.

I cut them because it makes it easier to mow around them and they were looking a little bit rough.
