Forget about goats...what about platypus moms? what are THEY doing?

I understand your delema, but you have to understand that you telling her no she can't or shouldn't do this hasnt helped already and will probably just make the situation and y'alls relationship alot worse. The best senario would be to help the girl out. Yea if she's nervous leading a well broken horse she's not going to lead that foal nor build up her confidence any. So why don't you offer to ASSIST in the training that you think it would be fun and u would love to help out whenever possible. Yea your words might be twisting a bit but in the end it also would give you even more experience which all horseback riders need. Also give her the contact info of your farrier that helped you out when you just got your foal. It's her money and they'll do what they want with it. It may turn out all the best in the end with the foal and they may end up selling it. But as a horse person ask yourself if you honestly don't think that you would enjoy working with a foal. And who knows, u may can get some side cash for it.
