Okay so I moved recently. I filled out the change of address sort of later than I should have. Recently a couple of things came out return to sender now that a few companies have tried mailing me at my new address. What I don't get is, what does it matter anyway. Shouldn't I have received the mail anyway?

If you do not inform the post office of your change of address , your mail will continue to go to your old address. The new resident will either throw it out or send it back with "return to sender". If the post office is aware of your new location they will automatically transfer your mail promptly. Important companies need to be advised immediately. That important check might just end up in the wrong hands otherwise. Yes it matters.

When I moved, I waited too long to fill out a change of address and the mailman took all of my mail and sent it back to all of the companies. My bank put a hold on my account because the mail service problem, my check that I expected was sent back to the company and I had to wait for a new one to be printed and a stop payment to be made on the other one, all of my bills were behind because they didn't catch up with me, and in the end, I had a HUGE headache.

Yes, it does matter.

You should file the change of address at least a month ahead of time if possible. It depends on if you have anything important to receive, such as bills that will need to be paid in a timely manner.
Otherwise, companies ask for an "address correction requested" to forward mail, and they usually get it. But not all companies do so.

If you don't fill out a change of address, the mail going to your old address cannot be forwarded to you. Even if you change your address with respective senders directly, it still takes time for them to update their records.
To this day, I still get mail for the guy who used to live in my apartment, and he's been gone for 7 years!
