loop it in the light fitting and tape it up.
At the other end connect it in the consumer unit or junction box so that the cable is protected.
Do not cut it too short in the light fitting as you may eventually change the light fitting for one that does need an earth fitting.

If you mean to an existing cable and that your spotlight is double insulated/no earth required, then terminate the earth wire in the supply cable with a single section of strip connector, first put a short piece of green/yellow sleeving over the bare wire. (If it is bare?) Tuck in in beside the other connections.
Ignore the two US replies above, and the one below, you are obviously in the UK. We dont have grounds/GFI's/receptacles / black and white wiring/120 volts or any other parts of US electrical systems here.

You can't eliminate the GROUND wire.
Anybody who says you can is an idiot.
You have to get a solid copper rod (called a grounding rod) about 6 feet, or 2 meters long.
Drive the rod as far into the ground as possible next to whatever the light is mounted to.
It has to be a minimum of 3 feet, or 2 meters into the earth.
Secure the GROUND wire to the rod, & cut off the excess rod if any.

you must play soccer ..earthed ?earth wire? GROUND must be politically incorrect....its a ground wire drive a steel rod into the ground and clamp the ground wire to it..I know what you asked when it rains out and that light comes on and you electrocute one of your kids you will be wishing that you had of grounded it and maybe added a ground fault interupter

Don't do anything with it,,just cut it back.
The wire compaies don't know what their wire is being used for,so they have to put that 3rd wire in their cable and it's used as a ground.
