Australians have adopted food styles from all over the world and amalgamated them to make some wonderful dishes. The great thing about food in Australia, for the most part, is that it is fresh - particularly the seafood.

When you get to Sydney buy a copy of the Sydney Morning Herald Good Food Guide. It is issued every year and rates and recommends restaurants. You will find the book in any newsagent or bookshop. Just reading the reviews will whet your appetite.

Good restaurants are not necessarily expensive. The top of the range will cost you $100 or so a head but there are plenty of good restaurants that will cost about $20-$30 not including wine.

As far as wine is concerned, many restaurants are Bring-your-own (not those in hotels or clubs). Buy a bottle or two of wine at the local bottle shop and take it with you. You don't pay ridiculous mark-ups then. Check with the restaurant whether it is BYO or licensed.

Australian's have embraced a new cuisine which mixes Asian dishes with local dishes. These are formally only found in hotels and top restaurants like Level 44 in Sydney [ costs a fortune ].

If you want authentic Australian cuisine you'll have to eat Aboriginal food which chefs have not yet adapted into modern menus - but it's coming, just give it time. Doing it alone will be simply disgusting [ ants , cockroaches , tree food etc etc ].

Try local bistros at RSL and bowling clubs.

With Anzac Day approaching towards the end of this month, you should find some places offering 'authentic' Aussie meals on 25 April. Check your local newspapers.

You're not going to find that much - most of our food is actually fairly multicultural. I'd maybe say try Hogs Breath Cafe in Bondi - they'll give you heaps of different types of steaks. (A pretty Aussie meal I guess...) Alot of touristy restaurants (like ones in hotels) will have kangaroo steaks or maybe you could try seafood - that's kind of Australian cuisine. (Balmain bugs are a type of cray fish that I've never seen outside Australia) Barramundi fillets are another fish that are fairly Australian.

Meat pie (don't ask what the meat is, lol!) and chips. No, really, I'd recommend the seafood, especially Balmain bugs (which are not bugs, by the way - they are a type of crayfish and totally delicious) and barramundi, which is a flaky white fish - beautiful. My son eats kangaroo steak and says it's great but I wouldn't touch it myself!
