Great question. I've been fortunate to meet several. Here are a few.

Ron Toomer invented (and built) many, many steel coasters (Arrow coasters like the boomerang that you see at many parks). He builds some pretty agressive rides. He's a nice guy, but boy, some of his coasters can be quite challenging. I'm sure you've seen several of his works. All the suspended coasters like Big Bad Wolf are his. Many of the looping coasters are built by arrow as well such as lightning loops, lochness monster, as well as some other mega coasters with multiple loops such as Viper or Shockwave.

Bolliger & Mabillard SA of Switzerland are world famous. They build some of the smoothest and best steel coasters as well. Millenium Force, most of the Inverted coasters like Batman, Raptor, Dueling Dragons, etc, are designed by these guys. Also, the very tall coasters such as Superman and floorless coasters like Medusa are B&M coasters as well.

Denise Dinn is the mastermind behind several woodies that have popped up over recent years. She's a genius and a nice person. Great coasters that pack a great punch, even in small space. My favorite is Boulder Dash, the #1 wooden roller coaster in the world! AWESOME!

Hope that helps!

La Marcus Thomson invented the roller coaster as we know today in 1884 at Coney Island in New York City. His ride was called the L A Thomson Switch Back Railway which is a pair of identical tracks going opposite directions driven by gravity over small gentle hills with speed of about 10 mph. But the Russian ice slides of the 17th centurey were the first rides to resemble rollder coaster than shortly after the Russian Mountain a tracked version of the ice slides.
