They don't open them. Most people die with their eyes open, unless they died unconscious or in their sleep. At the moment of death, the cells in the body release calcium (there's like a lot of technical medical type terms but, in essence, that's what happens) and everything sort of "freezes" in place. The movies are so ridiculous when it comes to death scenes.

That happened to my mother when she died in my arms! I don't know why but i'll never forget it!
