Everything that is ever downloaded on your computer (including emails) is on your hard drive. This is why most people pull out the hard drive first when they sell or throw away a computer.
Now, retrieving this information from your hard drive is possible, but more complicated then what I know how to do. I am sure that any "Egg Head" knows how to retrieve these emails, but before you go to the time and expense.....a judge will not accept such evidence. You see....anyone can open an email account in any name and then write false emails to try and make that person look guilty. Don't believe everything you see on Judge Judy.
Also, welcome to the year 2007. Adultery is no longer grounds for divorce. Sorry, if you are looking for a divorce you can file for divorce under "Irreconcile Differences". You would surley be granted a divorce. If it is money that you are after from your spouse, you must prove that she is making more money then you, or you must have custody of the kids and sue for child support.
I know how you feel and you would love to prove that she has cheated, but the judge doesn't care.

Depends on how important this is to you.
As soon as a file is deleted from a system it's important to power off that PC until someone who is a computer expert in data recovery can image the systems drive and start a recovery process on the data. The longer the system is running after the deletion and the more that is done with it (especially downloading or installing programs) the less likely data can be recovered from it.
I know I've done this before and am rather good at data recovery my success rate for getting key data stands around 98%. Just make sure whoever you use knows what they are doing.

What email is it? AOL? Yahoo? MSN?
When I had AOL oh so many years ago, there was an option for all messages to be saved into a filing cabinet. Even though they may be deleted in the in and out box, they should (IIRC) be still in the filing cabinet.
With yahoo and msn, they are gone when they are deleted from the trash can. There is also the sent folder but she may have deleted it there too.

You don't need evidence of an affair.
If you want a divorce, you can state she was having one, but also there being irreconcilable differences.
